I already told you how I'm in love with the eggs here. I bought some farm-fresh eggs at the farmer's market. Of course the were from chickens who led happy little free range, cage free, grain fed chicken lives on their guilt free farm. They were huge, so big that they fit poorly into the recycled standard cardboard egg crate they were packed in. Those must be some chickens.
I cracked a couple open for a breakfast omelet (filled with black bean chili and aged cheddar, if you're interested). The first one was a double-yolker, and then so was the second! Clearly, I am easily amused, but I felt like four yolks for the price of two was pretty exciting.
I poached the superfluous yolks for Arram's lunch. He can put the cholesterol to good use.
The omelet was delicious.
